John Weiss
This is a bcx)k for hikers, hunters, fishermen—anyone who roams the outdoors with limited gear and supplies. It shows how to pack and prepare delicious meals that enhance every excursion.
Starting from the premise that an active outdoorsman needs a high-energy diet, John Weiss first discusses meal planning based on sound nutritional principles. He describes the special lightweight freeze-dried and compressed foods available today, and recommends supplements from the supermarket that cut costs and add variety. He explains how to make your own nonperishable trail foods by air-drying and oven-drying fruits, vegetables and meats,-and gives recipes for making gorp, jerky and pemmican. In addition, he describes and illustrates common wild edibles that can fill out the diet. Weiss shows how to pack foods for extended trips, especially the "toughies"—liquids, eggs, butter, cheeses—and offers numerous ingenious solutions to this tricky problem.
All the techniques of trail cooking are covered in this complete book. Here are an expert's tips on fire-making: wood selection, fire-starting, fire patterns, types of fireplaces, cooking grills and accessories. Weiss gives a complete rundovm on trail stoves—the pros and cons of the different

fuels, plus information on operation and repair. He recommends the best pots, pans, dishes and utensils for the trail tramper and shows how to devise makeshift cooking implements from native materials, coat-hanger wire and foil. For those who are able to pack heavier gear, he covers cooking with reflector ovens (store-bought and improvised), and includes recipes for baking combread, biscuits and pie crusts. A chapter on dutch-oven cookery explores the many possibilities of this versatile implement, including frying on the lid, below-ground roasting and baking. All you want to know about sourdough cookery is here, too— how to make and store a starter, plus recipes for delicious pancakes, muffins, biscuits and bread.
Rounding out this unique book are chapters on ultralight trail cooking, survival cooking and clean-up. An appendix includes a list of manufacturers and suppliers of trail-cooking equipment, high-altitude cooking tips and a table of common weights and measures. Trail Cooking is illustrated with 175 photos and drawings. Take it with you on your next trip.
JOHN WEISS is a veteran outdoorsman and a prolific writer with over 1500 published articles and five books to his credit. Although he has hunted and fished in nearly every state and Canadian province, he asserts that outdoor cooking is one of his favorite pastimes. He lives on his ovra working farm and game preserve near the village of Chesterhill, Ohio. Vissza
