It's a popular myth that curries are simply chilli stews, hot enough to bring tears to the eyes! In fact they are as diverse in character as the generations of people who, over hundreds of years, have contributed variations to the countless recipes. In The Hamlyn Curry Cookbook the author takes us on a journey round the world through ten different countries, tracing the differences between each region, giving examples from traditional Indián recipes to those adopted by the people of the carefree islands of the Caribbean. The dishes have been carefully chosen to show the various combinations of herbs and spices which have evolved in different parts of the world. These curries - somé hot, somé mild, somé sweet, but all delicious - have been thoroughly tested to ensure that the techniques are appropriate to the Western kitchen and if the ingredients cannot be obtained easily then alternatives are suggested. Born in Delhi, the daughter of a Punjabi diplomát, Meera Taneja has been interested in food for as long as she can remember. She cooked her first full meal at the age of eight and though she readily admits that it was "something of a disaster", her father was so encouraging about her efforts that she decided to make cooking her career. After coming to England she qualifled as a home economist at Harrow College, quickly becoming proficient to a Cordon Bleu le vei. Her travels in India, Pakistan and Sweden and a spell working in Japan further broadened her awareness and experience of food. Meera Taneja began writing cookery books after she married, settled in England and her two daughters were born. She enjoys teaching and demonstrating and communicates her enthusiasm for the essence of Indián cooking - the subtle use of the various herbs and spices - so well that she was invited to make and present food programmes for both the BBC and Independent television channels. Now a food consultant to a major chain of stores, she was persuaded to write this book to prove "that curry is not one single national dish, tasting the same the world over". For curry lovers everywhere, it's a treat. The Hamlyn Group test kitchen provides ideál facilities for research into the latest cooking techniques and equipment. Here, recipes from all our books are checked and tested by qualifled home economists, and dishes are prepared for many of the photographs which appear in the Hamlyn books. Attached to the kitchen is a dining area in which visiting authors and overseas customers are entertained. ISBN 0 600 32272 6 Printed in Italy Vissza
