The shoots and bulbs of wild alliums
(the ancestors of cultivated garlic, onions, leeks, chives, and other members of the lily group of plants) were some of the foods for which prehistoric hunter-gatherers first foraged. Ever since, they have been indispensable both as flavoring ingredients and vegetables in many parts of the world, from the Far East to the Mediterranean, the Americas, and northern and central Europe.
