POLYPHENOLIC PHENOMENA
Polyphenolic Phenomena, published for the 20 th anniversary of the "Groupe Polyphénols", presents short papers on some of the most intensively studied topics related to plant polyphenols. Written by leading scientists in their speciality, each chapter describes the main research achievements of the last two decades and includes some of the essential bibliography of this period.
The book is divided into five parts : chemistry ; biosynthesis and biodegradation ; biological properties ; polyphenols in food, beverages and wood ; and application of polyphenols.
