This cookbook of Korean recipes in English has been prepared for the English reader with the hope that westerner cooks might experience truly authentic Korean dishes. Until now many Korean cookbooks have been presented in English, but they present only those recipes which westerners are presumed to prefer and they modify the recipes for western taste.
This cookbook is authentically Korean. It is a careful translation of recipes prepared by a woman who directs a Korean cooking school in Seoul, Korea for real Korean housewives who are actually using these recipes daily. Even the Korean style layout of the book is the same style as in Korean cookbooks and magazine cooking columns today.
It is true that these recipes stem from age-old Korean traditional recipes and as such are scintillating combinations of food and seasoning unique to the Korean heritage. It is also true, however, that Korean cooking is known for its individual touches. Each family has its own way of seasoning, and brides new to a certain family live with the mother-in-law, even today, long enough to learn these subtle nuances in cooking for their husbands.
The western reader, too, may wish to vary the ingredients according to individual taste. This is acceptable Korean-style cooking. However the recipes presented here present the current vogue based on yearr of refinement by the collective Korean palate.
Some of these recipes are presented in English for the first time. The step-by-step photo sequences make preparation quite easy and the glossary will help readers understand each individual ingredient and thereby develop a feel for the total impact intended in each recipe.
This book is presented in the hope that gourmet cooks interested in Oriental cookery may extend their repertoire of truly good food and enjoy authentic Korean cooking.
