The countries of the South Eastern Mediterranean region are among the world's most popular tourist destinations. Natural beauties, clean and sparkling seas, unusual desert landscapes and an immense architectural and artistic heritage are just some of their maior attractions. In this part of the Mediter-ranean there is a culinary tradition that has * developed over the centuries, the result of Arab expansion that reached from the West to the Far East. Through their contacts with such different countries and peoples the Arabs broadened their refined and already vast culture - renowned throughout Medieval Europe - that was a fundamental crossroads for Western and Eastern thought.
These contacts - trade and conquests - also brought new and different ingredients to their foods that have reached our tables as well. Oranges and lemons, eggplants and rice, just to mention a few, have become part of our daily diets.
A stroll through a sou/c will practically intoxicate you with the myriad colors and aromas of the spices, and the fragrance of herbs such as mint, that is used to flavor teas. In a souk you can taste nearly everything, from freshly baked bread to delicious sweets, from grilled meats to Harira, the traditional soup for Ramadan.
