The production and preparation of food occupy vast amounts of time and energy, not just in industry but alsó in the home. Food is about this close involvement of food with our social lives, and in particular about the way our old-established eating habits are being affected by new ways of providing food. For even in this most basic area of life, technology has moved in. The growing demand for 'convenience' foods, for food which is plentiful, cheap and easy to prepare, is making far-reaching changes: farming, and therefore the countryside, is being run more and more as an industry; synthetic foods are being developed and synthetic chemicals added to natural ones; and quite new sorts of food shops and restaurants...
