No single recent development can explain the steady rise to prominence of California wines. Whereas there were just over two hundred bonded wineries in the state in 1970, more than five hundred were active only a dozen years later. New plantings have increased once-sparse acreages of quality varietals by a hundred- and even a thousand-fold. Encouraged by advances in viticulture, vineyardists have planted energetically, sometimes recklessly, across the state. Growers and winemakers have learned where to plánt each type of grape, when to harvest, and how to use varied oaks in casks of differing shapes and sizes to achieve nuances of flavor and style.
